US Coffee Shop-Style Honey Flax Blueberry Muffins

We've talked about creating your own coffee bar to show off your coffee deliveries, and now we're going to be discussing how to create your very own selection of pastries!

Nothing is more classic breakfast food than a blueberry muffin! From rural communities to the big city, It seems every local coffee shop across the United States has its own signature muffin in its selection of baked goods, and since you’re creating your own coffee shop right in your home, we’re hoping this muffin will become one of your regular favorites.

Modified from a recipe found in a rural Georgia cookbook from the 1970s, we’ve added flax meal and honey for a touch of natural healthy flavor! This muffin is perfect for a breakfast on the go you can grab as you rush out the door, or paired with eggs and bacon for a balanced breakfast on a lazy Sunday morning.

US Coffee Shop-Style Honey Flax Blueberry Muffins


For the crumble: 

  • 1/2 cup all purpose flour
  • 1/2 cup brown sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 stick melted butter

For the muffins: 

  • 2 eggs
  • 1 cup fresh blueberries
  • 1 cup flour
  • 1 cup flaxseed meal
  • 2 tsp baking powder
  • 3/4 cup buttermilk
  • 1/2 cup vegetable oil
  • 1 cup honey
  • 1/2 tsp salt

Combine all crumble ingredients with a fork and set aside. 

Combine flour and flaxseed meal. Add baking powder and salt, and whisk until combined. 

In a separate bowl, beat eggs. Add buttermilk, vegetable oil, and honey, and mix well. Add wet ingredients to dry, and stir until the dry ingredients are just moist. Add fresh blueberries, and carefully fold into batter.

 Fill greased or paper-lined muffin cups about 3/4 full.

For 12 muffins, bake about 20-25 minutes at 400 degrees, or until golden brown. For 8 larger muffins, bake at about 30 minutes at 375.

Remove and let cool. Keep an eye on them, as they brown easily due to the honey and flax.

Make them on the weekend as a specialty, or make them on Sunday night to prep for a week of breakfasts. These muffins also freeze well, making them an amazing meal prep food. Just wrap a frozen muffin in a paper towel and microwave in 30-second intervals until hot!
